WHere is a simplified version of a cocktail from our latest drinks list. It's a batch premix which is loaded with flavours of the Christmas time, which makes it ideal for a celebration. Any leftover citrus syrup you can use for breakfast cocktails, puddings, or to make more rounds of this cocktail.

Serves 10 servings
Ingredients for the Clementine Syrup (makes 750ml)
300ml newly squeezed clementine juice
200ml recently pressed lemon juice
500g caster sugar
For the Cocktail (produces 850ml, to serve 10)
400ml good quality vodka
100ml London dry gin
150ml peach-flavored liqueur
200ml clementine cordial (see above)
Whole cranberries, to garnish
Mandarin essential oil, for finishing
Instructions
For the Cordial: Combine all the components into a pan, heat until it reaches a gentle boil, agitating so the sugar melts. Then, take off the heat and let it to cool down fully. Pour into an clean bottle, seal keeping it chilled, it will last for up to four weeks.
Preparing the Batch Mix: Mix the specified liquid ingredients into one large bottle, leave to sit for one hour, then filter it best through a fine cloth, making it perfectly clear.
When ready to serve: Pour 85ml from the batch mix into your cocktail shaker containing ice, gently stirring gently for about 60 seconds to chill. Pour into an frosted cocktail glass or equivalent, decorate with the cranberries adding the final touch by giving it a brief mist with the mandarin essence above the glass.
